The main objective of this work was to explore the feasibility of using a novel substrate . Phyllanthus emblica fruit dregs ( 50% wt or so) obtained after the fruit pressing mechanically , as sole nutrient source for the production of tannase , pectinase and proteinase by solid state fermentation (SSF) with Aspergillus niger .For SSF experiments , the focus of our attention was that the time course of activity formation for aformentioned three enzymes , the selectin of suitable effective media and their optimum parameters were examined . The experimental results showed that a parallel tendency was existed between the formation of three enzymes and concentration of reducing sugar in the medium was observed . At the initial stage of fermentation , when enough sugar was avalable , the highest level of enzymatic activities was measured . On the contrary , when reducing sugar was almost exhausted the production of three enzymes was completely suppressed . On SSF tannase ,pectinase and proteinase reached the maximum activity values after culture of 36 hours . The results showed that the SSF is of advantages for production of three enzymes and selection of rice and dregs of Phyllanthus emblica as culturing substrate is the suitable ,effective medium .These “Koji” products were able to use in treatment of fruit juice for clarification and for removal of precipitate in winea .
